Cooking in the islands…

We all have to eat to survive, and eating healthy is  one of the reasons I moved to the islands. I discovered a wonderful thing that the locals have always enjoyed, bottled coconut water! It is sold on street corners all around the island daily. I make frequent trips to the local fish market, fruits, and vegetable stand as often as I can. I find that sweet or unhealthy food items tend to be more costly. Which works out for me, since I really don’t need them. Meats are expensive as well. However, ground provisions are inexpensive. That includes yams, potatoes, pumkins, etc. My family and I still like to eat multi-cultural foods. So I make Mexican food, Chinese food, Italian food, and American food, along with my favorite Caribbean foods. I love to create, so cooking is an extension of that. My favorite things to make on the island are: curry chicken with white rice and vegetables, stewed oxtails, fried chicken, lasagna, Ackee and salt fish with fried dumplings, mozzarella cheese sticks, fish cakes, stewed turkey wings, chocolate chip cookies, and lemon pound cake. Just to name a few. I don’t like cooking in the heat, but I do like going to beach after getting all the cooking out of the way early. Not a bad trade off.
